Available Processing Methods
Wet-Hulled (Giling Basah)
Primary process. Complex flavors: dark chocolate, dried fruit, savory notes unique to Toraja terroir. Higher altitude gives more complexity than other Sumatran Arabicas.
Full Washed (Specialty Lots)
Available from select Toraja cooperatives. Cleaner, brighter — shows fruit and floral character often absent in Wet-Hulled lots. SCA 84–86 available.
